Hubs and I were tired of scrambled eggs so I tried your recipe this morning and what a treat. I didn’t have the peppers and was too impatient to wait on the thick bacon, so I sautéed the leftover sausage, added spinach, potatoes, about a tablespoon of milk per egg and a 1/4 teaspoon of smoked paprika. Hub loved it. Ate half of it. Lol. Thanks for the recipe, and comments with such great ideas were so helpful for future use. PS – Hub says, “Thank you,” too.

Hey Kate! I suggest letting the cooked vegetable and bacon mixture cool slightly before adding it to the egg mixture so that it doesn’t cook the eggs when it’s added. Hot veggies and bacon could scramble the eggs!

I hate recipes that only have you follow instructions, whereas I want to learn a little bit about the . Why, behind the instructions so i can learn how to cook and make my own adaptations, not just how to follow instructions
